The foot is good. Loaded with connective tissue. Great soup. And burnt means there's no hair on it, which is something I like in a soup foot. For me, the squeam line is drawn between the tripe -- acceptable, possibly good -- and the pizzle. I'd always thought cod a synonym for pizzle; the distinction between bull pizzle and cow cod will leave me unsettled for the immediate future.

There's no tripe like goat tripe.
The real problem here is I can't tell what is what. So I can't choose.
But ham hocks are a staple of my cabbage, bean and split peas soup. but so are horse loogies.
